A New Taste of Valpolicella: The Unexpected Amaro Made from Amarone’s Dried Grapes

In a land renowned for its age-worthy red wines, an unexpected product emerges: a handcrafted Amaro made from dried Amarone grapes, designed to tell the story of Valpolicella from a new perspective—without losing its identity.

The new Amaro Siridia was unveiled at Vinitaly 2025 and featured in the Corriere di Verona (April 9, 2025) as an example of innovation rooted in the territory. It is in fact the first Amaro from Valpolicella ever made using dried grapes, the same precious fruit that gives life to Amarone and Recioto.

A Liqueur Born from Experimentation

The creation of this Amaro is the result of a long internal research process, developed over years of testing, infusion trials, and botanical studies. The starting point is clear: the dried grapes and all they represent for this land.

This vision was pursued by Edoardo Speri, winemaker and co-founder of Cantina Siridia, who transformed ten years of experimentation and over one hundred recipe trials into a unique creation: an Amaro that begins with the most iconic ingredient of Valpolicella.

The Goal?

To craft a liqueur that enhances local raw materials while offering a flavor profile suited to modern mixology.

Territorial Notes, Forward Thinking

Amaro Siridia has a wide and balanced aromatic profile. On the nose, it reveals balsamic hints, citrus peel, spices, and subtle fruity notes. On the palate, it offers a harmonious balance between softness, bitterness, and elegant alcohol content.

It was designed to be enjoyed neat, as a digestif, or used as a creative ingredient in cocktails, opening a new way of interpreting the flavors of Valpolicella.
