Our creative line between wine, research and the interpretation of Valpolicella

This line was born from the desire to explore new expressive possibilities of wine while always starting from who we are: winemakers from Valpolicella. Here, we gave life to Gli Elementi di Edoardo, the most experimental project of Siridia.

Through Acqua, Aria, Fuoco and Terra, we tell four different ways of interpreting time, evolution and the relationship between wine and the natural elements.

Each project begins with a question, an intuition or an experiment developed in the cellar over the years. Some wines require long ageing periods, others involve unconventional processes or non-traditional winemaking techniques.

What guides us is not the search for a special effect, but the curiosity to understand how far the grapes of Valpolicella can go while preserving balance, identity and emotion.

A project born from our research

Alongside the production of our Valpolicella Classica wines, over the years we have dedicated more and more space to experimentation.

Micro-vinifications, ageing trials, different drying techniques, new materials and extremely long evolution times: Gli Elementi di Edoardo represents our creative laboratory.

Each wine follows its own unique path.

Some projects required years of research, trials and ageing before reaching the bottle. Every Element was born from a precise idea: exploring new techniques of winemaking and wine evolution while always maintaining balance, identity and coherence with our vision.

Gli Elementi di Edoardo is not the result of chance or improvised experiments, but of projects developed over time through study, observation and continuous micro-vinifications. Only once we achieved the result we had imagined did we decide to present them to the public.

All the wines in the line have been produced in defined and limited quantities. These are unique and unrepeatable projects that will come to an end once the bottles produced are sold out.

Each wine interprets the natural element it represents — Acqua, Aria, Fuoco and Terra — not only through its production technique and evolution, but also through its visual identity, expressed in the labels created for each project.

ACQUA

Our underwater-aged wine

Acqua was the first project of Gli Elementi di Edoardo and represents the beginning of our research into wine evolution beyond the boundaries of the cellar.

The project was born from slightly dried Corvina grapes, first aged in barriques and then immersed underwater for more than 12 months.

With Acqua, we wanted to observe how a completely different environment could influence time and the evolution of wine in bottle.

Constant pressure, absence of light and vibrations, the continuous movement of water and stable temperatures slowly accompany the wine during ageing, creating an expression different from the same bottle evolved in the cellar.

Over time, the Acqua project expanded to include other wines from the winery: in addition to the Corvina wine, we also immersed underwater 50 bottles of our Astris Metodo Classico and 30 bottles of Aria, to observe how different wines react to the same ageing environment.

For us, Acqua represents a reflection on time, transformation and the ability of wine to continue evolving even after bottling.

Characteristics of Acqua

100% Corvina

Slight drying of the grapes

Barrique ageing

Underwater evolution for 12 months

Extremely limited production

ARIA

Our experimental white wine between wood and amphora, created to challenge time

With Aria, we wanted to explore a different idea of white wine: a wine designed to challenge time and continue evolving slowly over the years.

The grapes undergo a short drying period followed by a delicate skin maceration. Fermentation takes place in wood and the wine then completes its journey with a brief passage in amphora before bottling.

From the very beginning, our goal was not to create an immediate white wine, but a wine capable of transforming over time, developing complexity, depth and balance through long bottle ageing.

A small part of the production is also aged underwater, creating a parallel evolution that allows us to observe how different environments can accompany the wine throughout its journey.

Aria is one of the projects that best represents our idea of research: a living, evolving and constantly changing wine, capable of telling the story of time with every tasting.

Characteristics of Aria

Bianco Veneto IGT

Partial drying of the grapes

Fermentation in wood

Brief amphora ageing

Limited edition

Dual cellar/sea evolution

FUOCO

Our wine made from dried and smoked grapes

Fuoco was born from the desire to approach grape drying in a completely different way.

For this project, we use Corvina grapes that are smoked and then dried using a method developed directly by us in the cellar.

We arrange the grape crates around a barrique transformed into embers and, as the fire slowly decreases, we cover everything to allow the grapes to absorb the smoke gradually.

The result is not intended to be a wine dominated by smokiness, but rather a balance between depth, tension and toasted notes.

Fuoco is one of the wines that best represents the most instinctive side of our research.

Characteristics of Fuoco

100% Corvina

Dried grapes

Natural grape smoking

Barrique ageing

Long bottle ageing

Limited production

TERRA

Our fortified wine inspired by the solera method

With Terra, we wanted to explore the concept of depth and continuity over time.

It is born from an Amarone base made exclusively from dried grapes. During fermentation, we stop the process before the sugars are fully converted and the wine is then transferred into small 100-litre sigarillos.

Every year, we add must from the new Amarone fermentation following a philosophy inspired by the solera method, allowing the wine to evolve continuously vintage after vintage.

In 2025, we completed the project by bringing the wine to 20% alcohol by volume.

Terra is our most meditative wine: slow, deep and meant to be enjoyed without haste.

Characteristics of Terra

Fortified wine

Amarone base made exclusively from dried grapes

Evolution in sigarillos

Solera-inspired method

20% alcohol by volume

Extremely limited production

Our way of interpreting Valpolicella

Gli Elementi di Edoardo represents the freest side of our identity.

Even in our most experimental projects, we remain deeply connected to Valpolicella Classica, its grapes and its culture of grape drying.

At the same time, this line allows us to ask new questions:

how does a wine evolve underwater?

what happens to a white wine aged between wood, amphora and sea?

how far can the dialogue between wine and smoke go?

how can a fortified wine made from Amarone dried grapes transform over time?

We are not searching for definitive answers.

We are searching for wines capable of telling a story, expressing an intuition and reflecting our continuous desire to explore the world of wine through the sensitivity of Siridia.

Participating in this event is a strategic opportunity for us, as we aim to connect directly with the audience and professionals of the Balkan wine markets, a region that continues to expand and shows increasing interest in high-quality Italian wines. We are bringing to Belgrade our contemporary and identity-driven interpretation of Valpolicella, through wines that express the tradition of our territory — such as Valpolicella Classico, Superiore, Amarone and Recioto — together with creations born from our ongoing research, including the Astris Metodo Classico and our Passito Bianco, described by many as a modern, gourmet-style wine.

Siridia’s philosophy is rooted in the desire to offer an authentic narrative of Valpolicella, one capable of blending heritage with vision. This approach resonates strongly with an international audience that is curious, quality-driven and eager to discover the personality of independent producers encountered during events like Wine Vision by Open Balkan, a fair that in recent years has established itself as a key reference point for those exploring new wine realities in the Balkans.

Throughout the event, Samuela, co-founder and export manager, will be present at our booth to welcome visitors and guide them through the Siridia wines and our production philosophy. It will be the perfect occasion to taste our labels, get to know us personally, and explore the work we are carrying out in Valpolicella — a journey that ranges from traditional wines to projects we have created with the aim of giving the territory a new and contemporary voice.

Wine Vision by Open Balkan is becoming an increasingly relevant platform for discovering and exploring the wine sector in the Balkans, thanks to its growing number of international exhibitors and the many opportunities it offers for meaningful exchanges between producers, importers and industry professionals. For Siridia, being present in Belgrade means strengthening our connection with these markets and sharing our vision of Valpolicella with an audience that shows year after year a growing interest in independent producers and contemporary projects.

We look forward to seeing you in Belgrade, from 22 to 25 November, at Hall 2C – Booth 54 of Wine Vision by Open Balkan 2025.

Siridia confirms its international spirit by taking part in the Vinitaly Kazakhstan Roadshow, one of the strategic stages of the Vinitaly Around the World program, organized by Veronafiere in collaboration with ICE Agency. The event, scheduled for July 7th in Almaty, represents a valuable opportunity to present our wines to selected operators and enthusiasts in an emerging market where interest in Italian wine culture is rapidly growing.

Why Kazakhstan?

Kazakhstan is currently one of the most interesting markets for Italian wine exports. Wine culture is evolving rapidly thanks to a segment of curious consumers who are eager to discover high-quality products that value history, territory, and sustainability. During the Italian Wine Podcast episode, we had the chance to explain how Siridia sees Kazakhstan as a country open to experimentation and ready to welcome new food and wine experiences. For us, this means being able to share an authentic story of our territory, offering wines that speak of dreams, research, and passion.

Siridia wines at the Vinitaly Kazakhstan Roadshow in Almaty

On the occasion of the Vinitaly Kazakhstan Roadshow, Siridia will showcase a selection that truly represents its identity: the red wine range “Il Ciclo di Siridio”, which expresses our vision of Valpolicella through Valpolicella Classico, Superiore, Amarone, and Recioto; the Metodo Classico Astris, symbolizing our pursuit of elegant sparkling wines; and the Bianco Siridia still white wine, which interprets with freshness and character the white grapes we grow in Valdadige. It will be an opportunity to introduce Kazakh operators and wine lovers to our production philosophy, based on identity, balance, and constant experimentation.

Interview with Siridia on Italian Wine Podcast

In anticipation of this event, we will also have the pleasure of sharing our experience through an interview conducted by Roza Zharmukhambetova, Italian Wine Ambassador, together with Stevie Kim, Managing Director of Vinitaly, as moderator. The full episode will be available from July 3rd on the Italian Wine Podcast channel, to dive deeper into Siridia’s story with a focus on marketing strategy and growth prospects in foreign markets.

Stay updated

Follow us on our social channels @siridiawines to experience this international stage together with us: an opportunity to build new relationships, tell our story, and bring a piece of Valpolicella to Kazakhstan.

In a fast-paced world, Siridia offers a new way to experience wine: slow, mindful, and authentic.

This is how Winefulness was born — a unique approach to tasting that combines self-awareness with the discovery of the land, turning each glass into a meaningful, memorable experience.

What is Winefulness?

Winefulness is a method created by Siridia to bring mindfulness into the world of wine. It’s not just about tasting, but about creating a full sensory and emotional journey — one that awakens the senses, slows down the mind, and opens a space for deep connection with the present moment.

A tasting that also tells your story

During our guided tastings, each wine is introduced through the lens of the hero’s journey, the symbolic narrative behind our labels. Each bottle represents a stage — desire, challenge, transformation — inviting guests to see a part of themselves in the story.

In this way, wine becomes a mirror: of emotions, memories, and aspirations.

Wine as a moment of awareness

Winefulness doesn’t follow rigid rules: it’s about listening with the senses, taking your time, and allowing the tasting to become an act of presence. Walking through the vineyards, observing the color in the glass, sensing aromas, feeling textures on the palate.

But also pausing, finding silence, and letting what’s within emerge.

A new wine tourism experience in Valpolicella

With Winefulness, Siridia reimagines the wine tourism experience in Valpolicella, making it more personal and emotionally engaging.

It’s a journey through wine and landscape — but also a journey inward.

Designed for those seeking more than just a typical winery visit, it offers a genuine moment to take with you.

Every wine tells a story. Come discover yours.
Book your Winefulness experience at the winery by choosing one of our guided tastings: Siridia Journey or Siridia Exploration.

In a land renowned for its age-worthy red wines, an unexpected product emerges: a handcrafted Amaro made from dried Amarone grapes, designed to tell the story of Valpolicella from a new perspective—without losing its identity.

The new Amaro Siridia was unveiled at Vinitaly 2025 and featured in the Corriere di Verona (April 9, 2025) as an example of innovation rooted in the territory. It is in fact the first Amaro from Valpolicella ever made using dried grapes, the same precious fruit that gives life to Amarone and Recioto.

A Liqueur Born from Experimentation

The creation of this Amaro is the result of a long internal research process, developed over years of testing, infusion trials, and botanical studies. The starting point is clear: the dried grapes and all they represent for this land.

This vision was pursued by Edoardo Speri, winemaker and co-founder of Cantina Siridia, who transformed ten years of experimentation and over one hundred recipe trials into a unique creation: an Amaro that begins with the most iconic ingredient of Valpolicella.

The Goal?

To craft a liqueur that enhances local raw materials while offering a flavor profile suited to modern mixology.

Territorial Notes, Forward Thinking

Amaro Siridia has a wide and balanced aromatic profile. On the nose, it reveals balsamic hints, citrus peel, spices, and subtle fruity notes. On the palate, it offers a harmonious balance between softness, bitterness, and elegant alcohol content.

It was designed to be enjoyed neat, as a digestif, or used as a creative ingredient in cocktails, opening a new way of interpreting the flavors of Valpolicella.

Limited Edition, Exclusive Tasting

This first edition is limited to just 200 bottles, making it a truly exclusive release. The Amaro is currently available at the winery, where it can be tasted as part of a guided experience, or purchased directly online in the dedicated section of our website.

Curious to try this unique Amaro?
Book a tasting at our winery or order it online and receive it directly at home.

Welcome to the universe of “Gli Elementi di Edoardo,” the new limited-edition line of exclusive wines from Siridia.

Inspired by the four elements of nature – Air, Fire, Water, and Earth – this Special Edition collection is designed for true enthusiasts seeking unique and rare wines that tell stories of research and creativity.

The Idea Behind These Wines and Their Story

“I have never considered myself an eccentric type, and those who know me are well aware that I have always preferred simplicity.

With ‘Gli Elementi di Edoardo’ I wanted to express my deep connection with nature by creating a line of exclusive wines inspired by the four fundamental elements of our planet.

Each wine is crafted to offer a unique sensory experience and novel flavor journeys.”

As Edoardo often mentions, we all know and interact daily with these four elements – Air, Fire, Water, and Earth – which lie at the center of our existence.

The Four Elements and Their Wines

Air

The element Air, light and intangible, is transformed into a white wine that evolves magnificently over time. “Air” is a fresh and refined wine, capable of surprising with its complexity and delicacy. It is perfect for those who love innovative tasting experiences. Air is produced in only 1,402 bottles.

Fire

Fire, a fascinating and overwhelming element, inspires an intense red wine. Made from a selected corvina grape and enriched with a unique smoking technique, “Fire” conveys all the passion and power of this element, offering an experience that warms both the heart and the palate. Fire is produced in only 500 bottles.

Water

Water, a source of life and regeneration, is reflected in a selection of wines designed to withstand the marine depths and aged underwater for an extended period. Among these, a white wine and a corvina have been chosen for their ability to enhance the freshness and vitality of this element, elevating the taste to new heights. Water is produced in only 150 bottles.

Earth

The wine “Earth” represents the element that sustains us, the generous mother from which mountains and traditions are born. This red wine, robust yet delicate, has been enhanced to go beyond traditional techniques, offering a meditative and profound experience in perfect balance with the character of the soil. Earth is produced in only 400 bottles.

Would You Like to Discover Them Too?

The “Gli Elementi di Edoardo” line from Siridia unites research and creativity in a Special Edition of limited-edition wines, designed for those who want to explore new flavor journeys with exclusive and rare wines.

You can discover the first two wines in the line, which are already available on our website: Air and Water.

The origins of Vermouth

Vermouth is a fortified and aromatized wine, enriched with a variety of botanicals such as herbs, spices, and roots. The term “vermouth” comes from the German word “wermut,” meaning wormwood, one of the key plants used in its production. While its origins trace back to ancient Greece, it was in 18th-century Italy—specifically in Turin—that vermouth took on the form and prestige we know today. Celebrated for its digestive properties and complex flavor, vermouth has become a staple both in mixology and as a standalone drink.

How do you drink Vermouth?

Traditionally enjoyed as an aperitif, vermouth is served neat or over ice, often garnished with a slice of citrus or a lemon twist. Its versatility makes it a key ingredient in numerous classic cocktails, including the Martini, Negroni, and Americano. In recent years, there has been a revival of vermouth as a drink to be savored on its own, thanks to its aromatic complexity and the wide range of styles available, from dry to sweet. This trend has led to a renewed focus on the quality of ingredients and artisanal production methods.

What makes Siridia’s Vermouth unique?

At Siridia, when we introduce our Vermouth Rosso, we call it a “special product.”

But the more we reflect on its origins and craftsmanship, the more we realize that the right word might actually be “unique.”

Siridia’s Vermouth Rosso is born from a red wine made with dried grapes—an unconventional choice.

The same grape varieties used to craft our Amarone are used here, but in this case, the wine is not aged; we want to preserve all its fresh fruit character. This alone sets our vermouth apart, as very few vermouths are made from dried-grape wines, and even fewer from dried red grapes.

By definition, vermouth is a wine infused with botanicals. At Siridia, our recipe is the result of meticulous research—a secret formula combining ten carefully selected botanicals, each chosen to enhance the distinctive traits of the base wine. With this creation, Siridia stays true to its winemaking vocation. In fact, we believe wine can be even more—it can become the perfect companion for a night out, a refined aperitif, or a signature cocktail.

“I don’t know about you, but now that I have Vermouth, I’m making a few more Americanos.”
This line from Edoardo, Siridia’s founder and winemaker, perfectly sums up our vision.

Our vermouth is crafted to shine in mixology, and soon it will be accompanied by exclusive recipes developed by professional bartenders and passionate enthusiasts.

Are you a bartender or a cocktail lover? If you’ve created a cocktail featuring our vermouth, send us your recipe—we’d love to share it with others who, like us, enjoy experimenting and innovating.

Why is Siridia’s Vermouth an ever-evolving experience?

Siridia’s Vermouth Rosso is proof that wine is not a static product—it is an ever-evolving expression. It can transform, open up new possibilities, and offer ever-changing emotions.

This is the heart of Siridia’s philosophy: exploring new paths without forgetting our roots, creating products that surprise and inspire.
