Gli Elementi di Edoardo

Our creative line between wine, research and the interpretation of Valpolicella

This line was born from the desire to explore new expressive possibilities of wine while always starting from who we are: winemakers from Valpolicella. Here, we gave life to Gli Elementi di Edoardo, the most experimental project of Siridia.

Through Acqua, Aria, Fuoco and Terra, we tell four different ways of interpreting time, evolution and the relationship between wine and the natural elements.

Each project begins with a question, an intuition or an experiment developed in the cellar over the years. Some wines require long ageing periods, others involve unconventional processes or non-traditional winemaking techniques.

What guides us is not the search for a special effect, but the curiosity to understand how far the grapes of Valpolicella can go while preserving balance, identity and emotion.

A project born from our research

Alongside the production of our Valpolicella Classica wines, over the years we have dedicated more and more space to experimentation.

Micro-vinifications, ageing trials, different drying techniques, new materials and extremely long evolution times: Gli Elementi di Edoardo represents our creative laboratory.

Each wine follows its own unique path.

Some projects required years of research, trials and ageing before reaching the bottle. Every Element was born from a precise idea: exploring new techniques of winemaking and wine evolution while always maintaining balance, identity and coherence with our vision.

Gli Elementi di Edoardo is not the result of chance or improvised experiments, but of projects developed over time through study, observation and continuous micro-vinifications. Only once we achieved the result we had imagined did we decide to present them to the public.

All the wines in the line have been produced in defined and limited quantities. These are unique and unrepeatable projects that will come to an end once the bottles produced are sold out.

Each wine interprets the natural element it represents — Acqua, Aria, Fuoco and Terra — not only through its production technique and evolution, but also through its visual identity, expressed in the labels created for each project.

ACQUA

Our underwater-aged wine

Acqua was the first project of Gli Elementi di Edoardo and represents the beginning of our research into wine evolution beyond the boundaries of the cellar.

The project was born from slightly dried Corvina grapes, first aged in barriques and then immersed underwater for more than 12 months.

With Acqua, we wanted to observe how a completely different environment could influence time and the evolution of wine in bottle.

Constant pressure, absence of light and vibrations, the continuous movement of water and stable temperatures slowly accompany the wine during ageing, creating an expression different from the same bottle evolved in the cellar.

Over time, the Acqua project expanded to include other wines from the winery: in addition to the Corvina wine, we also immersed underwater 50 bottles of our Astris Metodo Classico and 30 bottles of Aria, to observe how different wines react to the same ageing environment.

For us, Acqua represents a reflection on time, transformation and the ability of wine to continue evolving even after bottling.

ARIA

Our experimental white wine between wood and amphora, created to challenge time

With Aria, we wanted to explore a different idea of white wine: a wine designed to challenge time and continue evolving slowly over the years.

The grapes undergo a short drying period followed by a delicate skin maceration. Fermentation takes place in wood and the wine then completes its journey with a brief passage in amphora before bottling.

From the very beginning, our goal was not to create an immediate white wine, but a wine capable of transforming over time, developing complexity, depth and balance through long bottle ageing.

A small part of the production is also aged underwater, creating a parallel evolution that allows us to observe how different environments can accompany the wine throughout its journey.

Aria is one of the projects that best represents our idea of research: a living, evolving and constantly changing wine, capable of telling the story of time with every tasting.

FUOCO

Our wine made from dried and smoked grapes

Fuoco was born from the desire to approach grape drying in a completely different way.

For this project, we use Corvina grapes that are smoked and then dried using a method developed directly by us in the cellar.

We arrange the grape crates around a barrique transformed into embers and, as the fire slowly decreases, we cover everything to allow the grapes to absorb the smoke gradually.

The result is not intended to be a wine dominated by smokiness, but rather a balance between depth, tension and toasted notes.

Fuoco is one of the wines that best represents the most instinctive side of our research.

TERRA

Our fortified wine inspired by the solera method

With Terra, we wanted to explore the concept of depth and continuity over time.

It is born from an Amarone base made exclusively from dried grapes. During fermentation, we stop the process before the sugars are fully converted and the wine is then transferred into small 100-litre sigarillos.

Every year, we add must from the new Amarone fermentation following a philosophy inspired by the solera method, allowing the wine to evolve continuously vintage after vintage.

In 2025, we completed the project by bringing the wine to 20% alcohol by volume.

Terra is our most meditative wine: slow, deep and meant to be enjoyed without haste.

Our way of interpreting Valpolicella

Gli Elementi di Edoardo represents the freest side of our identity.

Even in our most experimental projects, we remain deeply connected to Valpolicella Classica, its grapes and its culture of grape drying.

At the same time, this line allows us to ask new questions:

  • how does a wine evolve underwater?
  • what happens to a white wine aged between wood, amphora and sea?
  • how far can the dialogue between wine and smoke go?
  • how can a fortified wine made from Amarone dried grapes transform over time?

We are not searching for definitive answers.

We are searching for wines capable of telling a story, expressing an intuition and reflecting our continuous desire to explore the world of wine through the sensitivity of Siridia.
