Winemaking technique | The base of this wine originates in Valpolicella. It is produced in September/October from fresh grapes, which undergo gentle pressing followed by fermentation in stainless steel tanks. Around the end of October, the Valpolicella base undergoes refermentation on a must obtained from grapes harvested in crates and left to wither for about 40 days. This wine making procedure is called "Rigoverno". After fermentation is complete, the wine ages for 18 months in second-passage French oak tonneaux and rests in the bottle for a minimum of 9 additional months. |
